strawberry chocolate chip muffins


This month I am excited to participate in a new baking club, the monthly Chocolate Party, hosted by, Roxana.  It’s a blogger event where each month chocolate is paired with a selected ingredient. This month’s Chocolate Party ingredient is strawberries.



Strawberries are in their prime right now in many parts of the country. They are on sale at all of the grocery stores and Mr. J and I are eating up as many as we can.



It took me a while to realize that I needed to stop eating them all and start baking. My parents were in town this weekend.  I love having muffins ready for breakfast whenever we have guests.  Who doesn't love a warm muffin in the morning?



My mom was more than happy to indulge in a little chocolate first thing in the morning.

Strawberry Chocolate Chip Muffins

Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients (18 regular muffins)
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 eggs
  • 3/4 cup sugar
  • 1 cup milk
  • 1/2 cup canola oil
  • 1/2 teaspoon vanilla
  • 3/4 cup mini chocolate chips
  • 3/4 cup strawberries, chopped into mini pieces
Instructions
Preheat oven to 400F degrees. Spray your muffin tin with non-stick spray.
In a large bowl, gently toss together flour, baking powder, salt, cinnamon, and nutmeg. Mix with a whisk until all dry ingredients are combined.

In a medium bowl, whisk together eggs and sugar until combined. Mix in milk, oil, and vanilla. Fold wet ingredients into dry ingredients and mix everything together by hand. Gently mix until all the flour is barely incorporated. The batter will be somewhat lumpy. Fold in the chocolate chips and strawberry pieces.

Pour batter into prepared muffin tins, filling all the way to the top. Top with additional mini chocolate chips.

Bake at 400F degrees for 5 minutes. Reduce oven temperature to 375F degrees and continue to bake for 20-23 minutes until tops are lightly golden and centers appear set.

Cool for 10 minutes in pan before removing to rack. Serve warm.
