Packing

I am off again for work to the dreaded Syracuse, NY and then to Middlebury, VT. Actually neither are that bad. There are ample good restaurants near the hotels and schools, but the ride is so long. I have gotten used to flying right now so I much prefer being able to read or do work on the plane. I feel so unproductive in the car.



Anyway, here is the breakfast that hopefully will fuel me right up through the day. I am loving oatmeal right now. It is so filling and it makes me all warm on the inside. I spice it up with some cinnamon and today with some almond butter. I just got raisins at the store though so you know what is coming next time.

I hope it stays cool so I can continue to eat something other than smoothies. OK off to finish packing. I slacked quite a bit last night in my preparations for this trip. I have a feeling though after waking up that I might be getting a cold. I am wishing this bowl of warm oats will protect me.

  1. Ha! Oatmeal's back for me too! I've been doing pumpkin the last few days, but banana and almond butter is an old standby, as is cinnamon-raisin-walnut. :)

    I love that you're updating here lots...its really motivating me to finally get my butt moving and start my own blog--no more just talking about it!

  2. I would love to hear your pumpkin recipe. I have heard you can just mix in 1/3C of canned pumpkin. I definitely want to try it out!

  3. I just add a blob of pumpkin, no measuring...like a big spoonful or two. Too much and the texture starts to get kind of grainy. I also mix in either brown sugar, raw turbinado, or maple syrup to sweeten, a half tsp of pumpkin pie spice, and then some pumpkin seeds and dried cranberries. Super yummy for sure! Also, a little (like half of a small one) mashed banana works as a sweetener too, instead of the sugar. :)
