You know you want some: Double dark chocolate cherry cookies

You will find my yummy creations, one of which is...

Double dark chocolate cherry cookies
Combination of many recipes - so I am taking full credit for this!

Ingredients:
1 cup all purpose flour
¾ cup unsweetened Dutch process cocoa powder
1 tsp baking soda
¼ tsp kosher salt
8 tbs. unsalted butter, softened
2/3 cup granulated sugar
¼ cup firmly packed brown sugar
1 large egg
¼ tsp vanilla extract
1 cup semisweet chocolate chips
1/2 cup dried sour cherries

In a medium bowl, whisk together the flour, cocoa powder, baking soda and salt.

In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter, granulated sugar and brown sugar until fluffy, about 3 minutes. Add the egg, mixing well. Stir in the vanilla.



With the mixer on low speed, add the flour in three batches, mixing just until incorporated after each addition. Stir in the chocolate chips and cherries. Scrape down the sides of the bowl.


Refrigerate the dough for a few hours until firm.  The dough will be stiff.  Make 6oz scoops and place on cookies sheet.


Position a rack in the top and bottom thirds of your oven. Preheat the oven to 350 degrees. Line two cookie sheets with parchment paper.


Bake for 10 minutes exactly. Let cook completely on cookie sheets.  Enjoy!

Will keep for a few days in air tight container.  To have a really special treat, pop the cookies into the microwave for 20-30 seconds.  The chocolate gets all gooey and it back to its "right out of the oven" consistency.
