Thursday Thoughts: Roasted Red Pepper Hummus



This was one crazy week.  I had to go to Boston unexpectedly on Tuesday.  We had great weather and I got to tour some roofs.  Check out the views. Unforntuately a day away means a day of work that didn't get done. 

The last two days I was at Hamilton, NY.  Do you know what is in Hamilton, NY?  Not much.  Colgate University is there though and it is a gorgeous campus.



I got home today and there was a lovely package from the folks at Peanut Butter and CoBaking Serendipty hosted a giveaway and I won.  So much fun to win a giveaway. In fact it is double fun. Finding out you win is exciting and then you kind of forget again until the package arrives. This package made my day.  Thanks so much!  I cannot wait to dig in.


The recipe I have for you today is very simple and great to have on hand for a simple, healthy snack.

Roasted Red Pepper Hummus

Prep Time: 15 minutes

Ingredients (2 cups)
  • 16 oz can of chickpea and 1/3 can of liquid from can
  • 6 halves of artichoke
  • 1/2 a roasted red pepper
  • 1 1/2 tablespoons of tahini
  • 2 cloves minced garlic
  • 1 tablespoon fresh lemon juice
  • 1-2 tablespoons of olive oil
Instructions
Blend everything in the food processor until desired consistency.

  6. I just bought a container of hummus yesterday (oops.. too lazy to make my own this week!) but now I'm wishing I had some of yours instead! Roasted red pepper hummus is my favorite hummus flavor! Its dangerous when I have it at home, I could eat the whole batch in one sitting :) And congrats on the giveaway! Thats so fun!!

  8. Yay! Congrats on the win. I love hummus, but for some reason I have never made it myself. I raelly like the addition of artichokes, I am going to have to add that in when I finally get around to making it :)
