Pina Colada Smoothies and WIAW

Do you know the song, "If you like Pina Coladas..."?  Well I love that song. I am not a big music person.  I listen the the radio and have an iPod but I don't know lyrics or artists.  Let's just say I am not "in the know" when it comes to music.  I would not bet money on my knowledge of music.  This song however makes me happy.  

I know the lyrics.  

Every. single. one.

I was tired of my lady

I read the paper in bed
And in the personal columns

I didn't think about my lady
I know that sounds kind of mean

Have fallen into the same old dull routine

I'm not much into health food

So I waited with high hopes

Yep, that's right. Fun song. I also love coconut. When I saw the low-calorie recipe for a pina colada in this month's issue of Cooking Light I knew I wanted something similar.  i don't really drink alcohol though so I switched it up a bit and made a smoothie.  

Dancing in the kitchen with this drink in hand Tuesday morning is GREAT way to start the day.  Even if my husband gave me crazy faces.

Pina Colada Smoothie

Prep Time: 5 minutes



Ingredients (serves 2)
  • 1 cup coconut milk
  • 1 cup plain yogurt
  • 1 cup frozen pineapple pieces
  • 1 banana
Instructions
Put all ingredients in blender and blend until smooth, about 2 minutes.

Breakfast was the Pina Colada smoothie.  As I said, this was a GREAT way to start the day.  Not too sweet but just enough coconut flavor to make it seem like I was in an exotic location.


Lunch was leftovers from the Chicken Tortilla soup that I made a coupe of weeks go.  We never finish all of the soup when I make a batch so there is typically a container waiting in the freezer.  This really hit the spot with all of the rainy, dreariness around.


Dinner was just as easy. I was on my own for dinner and that means meals that Mr. J would not normally accept as a reasonable dinner.  I had pizza with spinach, cheese and egg.  Easy, peasy, delicious!

  1. I love that song too - it's like an instant mini vacation! I also really like the flavors of a pina colada in everything but an actual pina colada. Go figure!

  3. Haha! I love that you know all the lyrics. I won't even tell you the horrible 90s songs I have memorized. These smoothies look fantastic for a day on the beach... or just a boring day at home!

  4. I will need to crack open that issue, your smoothie does sound like the perfect refreshment. It is so humid outside right now. Sometimes food does provide an escape, so I am ready to drink this and escape to thoughts of Hawaii-yum!

  9. There are just some songs that for some unknown reasons, become close to our hearts. This is true with flavors too...Pineapples, coconut are just some of mine. They remind me of a tropical vacation I need to have sometime soon. Thanks!
