Two Dessert Day, Cookie Dough S'mores and WIAW


I woke up this morning to my husband singing "It's a heat wave." I don't know if that is the actually title of the song or not but it is hot today.  Not an official heat wave just yet but we are starting the possibility as of today. 


I would like to think that today really reflect the first day of summer.  Breakfast was a mix of cereal - Grape Nuts and Almond Clusters with blueberries and bananas. Berries in cereal is always a good thing.


I had brought a salad to work because it was suppose to be a very busy day.  At about 11:30 though I was not feeling the salad at all.  All I could think about was a tomato, mozzarella and basil sandwich.  I knew everything need to make such a sandwich was just sitting around the fridge waiting to be made. 


My husband easily convinced me to go home for the lunch hour.  That decision also led me to cookies.  A kitchen full of possibilities always means dessert at lunch.


Dinner was structured around using some of the stacked eggs.  It was suppose to be omelets but ended up being a scramble mixed with green peppers and onions.  I put fresh spinach under my pile of eggs and topped them with a mix of salsas.


We had a side of sweet potato puffs that just melt in you mouth. I am a big fan. Mr. J not so much.  We are now down to a single layer of eggs. Goal accomplished!


Dessert was made as a way to entertain myself as Mr. J headed out to hit some golf balls at the driving range.  This no bake dessert is quite dangerous.  Don't say I didn't warn you.


Lindsay over at Love and Olive Oil made one fantastic cookbook recently that was based all on cookie dough. Yum or Yikes! I haven't decided what is the best description yet.

We now have a container of egg free cookie dough in the fridge.

Dangerous I tell you.

Graham cracker, toasted marshmallow, milk chocolate, and cookie dough.
Smash together.
Heaven.

Cookie Dough S'mores

Prep Time: 5 minutes
Cook Time: 2 minutes





Ingredients (serves 6)
    Cookie Dough:
    • 4 tablespoons (1/2 stick) unsalted butter, at room temperature
    • 2 tablespoons granulated white sugar
    • 1/4 cup packed light brown sugar
    • 1/2 teaspoon vanilla extract
    • 2 tablespoons milk or cream
    • 1/2 cup all-purpose flour
    • 1/8 teaspoon salt
    • 1/4 cup mini chocolate chips
    S'Mores:
    • 12 graham cracker sheets, carefully broken in half
    • Two (1.55-ounce) bars milk chocolate
    • 12 marshmallows
    Instructions
    For the cookie dough:
    In a large bowl, use an electric mixer to combine the butter and sugars on medium speed until light and fluffy (2 to 3 minutes). Add the vanilla and milk. Mix in the flour and salt and beat on low speed until incorporated. Fold in mini chocolate chips.

    For the S'mores:
    Spread about 1 tablespoon of dough onto 12 of the graham cracker halves. Break the chocolate bars into 12 equal pieces, and center one piece atop each mound of cookie dough.

    Toast the marshmallows over an open flame until golden brown. Place a hot marshmallow on top of the cookie dough and chocolate and top with remaining graham crackers. Gently press until the marshmallow begins to ooze out the sides. Let sit for 30 seconds to soften and melt the chocolate. Eat!

    14. I'm totally intrigued by those sweet potato puffs--my husband would adore them. Is the song "we're having a heat wave?" I just mentioned it in my post yesterday--my mother always sang it, and I have no idea where it comes from.
