Cobb Salad for a Man


When it is hot out I don't want to cook, the sun takes all of the energy out of me.  The thought of turning on the oven makes me ill.  

For me the simple solution is salad or cereal.  Both meals I enjoy and am perfectly content to eat for lunch or dinner.  

I eat cereal for breakfast but not the salad.


Mr. J though likes something a bit more filling.  He can barely handle cereal as a breakfast dish.  No way is he going to eat that for lunch or dinner.  Salad is kind of the same way...maybe as a side or starter but not the meal.

Well, that was the case before I loaded it up with all sorts of toppings.  Amazing what bacon and large chunks of turkey can do for a salad.  Suddenly it is very much a meal in and of itself.

This is a recipe that is not really a recipe.  Think mixed greens with a whole bunch of toppings on top.  I suggest avocado as well but this was a last minute throw together for us and we didn't have one on hand.

Cobb Salad

Ingredients (serves 4)
    For the Dressing:
    • 3 tablespoons olive oil
    • 2 tablespoons red wine vinegar
    • 1 tablespoon lemon juice
    • 1 teaspoon Dijon Mustard
    • 1 teaspoon Worcestershire sauce
    • 1 small clove garlic, minced
    • 1/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    For the salad:
    • Cooking spray
    • 1/2 pound sliced smoked turkey
    • 2 hard-boiled eggs
    • 6 cups mixed greens
    • 2 medium tomatoes, seeded and diced (about 2 cups)
    • 1/2 cup cucumber, diced
    • 1/2 cup grilled corn, removed from cob
    • 1/4 cup crisp bacon, crumbled
    • 1/2 cup shredded cheddar cheese (about 2 ounces)
    Instructions
    In a small bowl, whisk together all of the dressing ingredients and set aside.

    Slice the turkey into 1/2-inch bite size pieces.

    Remove and discard the yolk from 1 of the hard boiled eggs. Chop the remaining egg white and whole egg and set aside.

    In a large bowl mixed greens with 2/3 of the dressing. Put the dressed greens onto a large serving dish. Place the tomatoes on top forming a row down the middle. In strips on either side of the tomatoes place the cucumber, corn, bacon, cheese, diced egg, and the turkey on top of the greens. Drizzle with the remaining dressing and serve.

    1. I love these salads, especially during the summer. They're filling and leave us satisfied. Sometimes I like to through a salad together based on any leftovers in the refrigerator.
