Not Your Average Joe

My husband is an odd man at times.  Last weekend this was confirmed once again when we had an adventure. A rescue adventure to be exact.

In our little household I do the majority of the chores but there is one this I cannot stand - taking out the garbage. I hate anything to do with garbage.  Thus, Mr. J has to take out the garbage.  It is HIS job.



Last weekend he took out the garbage.  To do this task he has to walk about 100 yards to the big dumpster out back.  The whole process takes about 5 minutes.  He was gone for way longer.  



When he came back he explained to me that someone (I blame our idiotic neighbors) left the top of the dumpster open and now a family of racoons is trapped inside.  Now I would say "oh no", feel bad but then walk away.  I hope you don't think I am an awful person now. I really don't want rabies.



Good thing for my husband because he set up an escape route via two pieces of wood. One to climb out of the inside of the dumpster and another one set up as a ramp to the free world down to the ground.  


Of course that was not good enough either. He had to go back down to make sure they finally did escape.  This time I tagged along.  Three of the original four made it out.  One was still there and that was not good enough.  Seriously my husband was climbing in the freaking trash to rescue that one.  The poor raccoon looked pretty miserable but it was the end of a hot day and they had been stuck for who knows how long.


I finally convinced my husband if it was meant to be, it was meant to be and we needed to leave the poor raccoon alone. He left with a sad face but also left the ramps vowing to go back later in the evening.  Around 7pm he went back out and the last of the raccoons had escaped. Thank goodness! My husband the rescuer.  


Now on to the recipe, this is not your average banana bread.  I switched out butter for coconut oil, lowered the sugar content, and added molasses.  

Banana Bread

Prep Time: 20 minutes
Cook Time: 50 minutes



Ingredients (1 loaf)
  • 1/4 c coconut oil
  • 1 tsp salt
  • 3/4 C sugar
  • 1/4 C molasses
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/2 C flour
  • 1 tsp soda
  • 3 bananas, beaten creamy
  • 1 tsp spoon cinnamon
Instructions
Heat oven at 350 degrees.

Cream coconut oil with salt and sugar, gradually.

Add eggs one at a time, beating well after each addition.

Sift flour, measure and sift together with soda and cinnamon.

Mash bananas with a fork, beaten until light. Add alternatively with dry ingredients to egg mixture.

Turn into a greased loaf pan. Sprinkle a bit of cinnamon on top. Bake approximately 50 minutes until done.

    Racoons? Ewww! I hate them! They are evil.
    Just pass me some of that deliciousness... I think the coconut oil and the molasses would make me want to hide this banana bread and enjoy the entire thing by myself. At midnight. ;)

  4. I love your adaptations...especially the coconut butter! And this story is too cute. I would have wanted to avoid the dumpster and the raccoons too!

  5. I love banana bread...and your husband is a good man. We get squirrels in our attic sometimes and Brian sets humane traps and then drives them to the state park to release them. He's a good man, too.
