chocolate chip cookie ice cream sandwiches #chocolateparty


This month for the chocolate party the special ingredient was ice cream.  Adding chocolate to ice cream is easy. I had trouble however coming up with an idea where ice cream was the ingredient. Then it hit me...cookie ice cream sandwiches. 



Portland, Maine has an AAA baseball team call the Sea Dogs.  Whenever I am in Maine during the season it is fun to spend an afternoon at the ball park. 

 
The best part of the outing though is not the baseball but the concession stands. They have a special ice cream treat at the Sea Dog stadium called Sea Biscuits. See those Sea Dog baseball players need their nourishment. 


Sea Biscuits are the BEST. Two chocolate chip cookies filled with a nice thick layer of vanilla ice cream.  Yum. Yum. Yum.  You cannot go see the Sea Dogs without getting a Sea Biscuit.   So here is my homemade recreation of the Sea Biscuit.

chocolate chip cookie ice cream sandwiches

Prep Time: 20 minutes
Cook Time: 15 minutes
Ingredients (12 sandwiches)
For the cookies
  • 2 cups cake flour
  • 1 2/3 cups bread flour
  • 1 1/4 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons coarse salt
  • 2 sticks unsalted butter
  • 1 1/4 cups light brown sugar
  • 1 cup plus 2 tablespoons granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 LB dark chocolate chips
  • Sea salt
For the sandwiches
  • 1/2 gallon ice cream of your choice
  • sprinkles or mini chocolate chips for decoration
Instructions
For the cookies
Sift flours, baking soda, baking powder and salt into a bowl. Set aside.

Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients and mix until just combined, 5 to 10 seconds. Drop chocolate pieces in and incorporate them without breaking them.

Press plastic wrap against dough and refrigerate for 24 hours.

When ready to bake, preheat oven to 350 degrees. Line a baking sheet with a nonstick baking mat. Set aside.

Make 24 equal, size balls with the dough, about 3 Tbsp of dough each. Sprinkle lightly with sea salt and bake until golden brown but still soft, 15 to 18 minutes.

Transfer sheet to cool.

To ensemble the sandwiches
When ready take ice cream out of the freeze to soften about 10 minutes before you plan to make the sandwiches.

Take two cookies and top one with about 1/2 to 3/4 cup of ice cream, placing ice cream on the bottom side of the cookie in the center. Place the other cookie on top of the ice cream, bottom side down and press firmly but gently down so the ice cream pushes out to the edges of the ice cream. Use a knife or small spoon to smooth out the ice cream.

If desired, dip sandwiches in a bowl full of sprinkle so the sprinkles touch the ice cream edges.

Eat immediately or wrap individually in plastic wrap and freeze for later.
