Raisin Bran Muffins



I like might be an eighty year old woman trapped in a younger body. Why you might ask?  Well for one I go to be around 9pm every night. I also like bran. Like love it.




Bran muffins were my favorite muffins at the bakery I worked at in college. Raisin bran is a top pick for cereal options.  Wheat bran is a constant in my pantry. So you tell me, am I an eighty year old at heart?




These little muffins are super filling due to all of the fiber. They are sweet though with the addition of raisins and brown sugar.  Add a little peanut butter in the middle and munch away.




Raisin Bran Muffins

Ingredients (12 muffins)
  • 1 1/2 cups wheat bran
  • 1 cup plain yogurt
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/2 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup raisins
Instructions
Preheat oven to 375 degrees F. Line muffin tin with paper muffin liners.

In a medium bowl, sift together flour, baking soda, baking powder and salt. Add in wheat bran.

In a small bowl, beat together oil, egg, sugar and vanilla, yogurt, and brown sugar.
Add to dry ingredients. Stir until just blended. Fold in raisins and spoon batter into prepared muffin tins.

Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
