Ready or not I want spring

Yesterday it snowed.  Thank goodness nothing stuck to the ground.  Then it rained a lot.  Today there is lots of sunshine.  It is still brisk but I am loving the sun. 

I woke up early and did a three mile run and walked for another two miles. Ever since my race two weeks ago I have had very little motivation to run.  A week after the race I ran 4 miles, earlier this week was a 3 miler and a 4 miler.  Hopefully I can get back into the grove.  I think the weather has really effected my motivation to get moving.  I really hate the rain.

After my run this morning I did the normal weekend grocery run.  I came home cleaned myself up and got on a mission to clean my closet.  I do this on a pretty regular basis but lately I keep finding clothes from middle school that I haven't worn in ages.  Thus I have a bag full of clothes for donation and another bag full for the garbage.  It's crazy that I am a clean freak but yet can stash clothes that have holes and stains on them for years. 

This week I was still in the mood for some coconut.  After searching the pantry I came up with coconut, cinnamon chips, and raisins.  I am not the biggest fan of raisins in cookies but what the heck. 


Coconut oatmeal cinnamon raisin cookies
 Makes 15 cookies

Ingredients:
1 stick butter
1/2 C brown sugar
1/4 C sugar
1 egg
1 tsp vanilla
3/4 C whole wheat flour
1/2 tsp baking soda
1 1/4 C oatmeal
3/4 C cinnamon chips
1/2 C raisin
1/2 C toasted coconut


Heat oven to 350 degrees.

Beat butter, brown sugar, and sugar in bowl until creamy.  Add egg and vanilla and beat well.

Combine flour and baking soda; add to butter mixture beating well. Stir in oats, cinnamon chips, raisins, and coconut.

Drop balls about 2 Tbsp on a lined cookie sheet.  Bake for 12-15 minutes.

Cool  for one minute before removing from pan.


At first I was a little unsure of the coconut cinnamon mixture.  Turns out it was a pretty good combination.  I liked them.  Mr. J liked them.  And a bunch of people at work liked them.

  2. Wonderful cookies and a great mix of flavors. I think I would do cranberries instead of raisins just because I'm obsessed with those at the moment. ;)
