The Easter bunny arrived early this year. And I am ready for all things Spring.
To me Spring is fresh foods, mainly veggies and fruit. I love, love love, these flavors.
And I love the colors. This is a fairly easy dessert to put together. The longest part is slicing the fruit and making the design. This decorative layout is about as artistic as I get but no worries as it won't last long to really worry about the appearance.

Fruit Pizza

Prep Time: 15 minutes
Cook Time: 10 minutes

Ingredients (serves 8)
- 1 pkg premade sugar cookie dough
- 1 4oz can crushed pineapple
- 1 8oz pkg bar cream cheese (room temperature)
- Any variety fresh fruit (peaches, kiwi, blueberries, raspberries, strawberries)
- 1/2 cup Apricot preserves
Instructions
Roll out cookie dough to cover a normal size pizza pan. Cook dough according to package directions. You will probably need to add about 10 minutes to the baking time since the dough will be rather thick. It should look golden all the way to center. Remove from heat and cool.
Beat cream cheese and crushed pineapples together until soft and easily spreadable. Cover cookie crust pizza.
Cut fruit and decorate pizza with artsy design. Try to cover all open surface.
Heat Apricot preserves in microwave until runny. Brush on pizza to cover all fruit. This will prevent browning of fruit.
Refrigerate to set for at least an hour.

I have to scream I WANT IT SO BAD..........!!!! those fruit are my favorites and it served with cream cheese.. no no no I could eat the whole by my self, I will not share it with anyone! :D

So many of these type desserts have glazed fruits, but I am glad that you left these perfectly natural. No doubt that the fresh fruit with the cream and cookie makes for one delicious bite. Also, it is none other than stunning in the picture-yum!
