Pumpkin Banana Ice Cream

Yes, I put the heat on this week.  

Yes, jackets are now the norm. I think there is a freeze warning for tomorrow morning.



My tummy however, is still craving ice cream.

It is Fall though so I added pumpkin.

Pumpkin Banana Ice Cream

Ingredients (serves 2)
  • 1 medium banana
  • 1/2 cup canned pumpkin puree
  • 1/2 cup coconut milk (any milk variety will do)
  • 1/2 Tbsp cinnamon
  • 1 tsp maple syrup
  • 1/2 tsp vanilla extract
Instructions
Put all ingredients in blender until smooth, about 2 minutes. You may have to adjust liquid depending on the power of your blender.
