Paleo? and WIAW

Tuesday ended up being a very good day. We were finally plowed out Monday night around midnight after anticipating it all day. I think the man with the tractor had a very long day.  But even my sympathies would not have turned him away.  Waking up Tuesday morning knowing I would be able to go out and about was a very happy moment.


Back when we were trapped inside, I entertained myself with kitchen time. I didn't have the best assortment of goods but I made do.

We had pancakes - almonds, bananas,  and coconut all made it into this mix.


I also had eggs and grits. The grits recipe will be up on Friday.  I am not a big grits fan but these were super yummy.  In fact this was a scoop of leftovers. Never. Ever. Have I gone back for grit leftovers.


I have been toying around with the whole paleo diet thing and made this orange chicken dish.  It was good.  Don't know if I can complete go in 100%. I don't need cow's milk but I really like cheese.  For proof see my cheese filled salad below.


By Sunday I had hoped to be out and about including a trip to the grocery store. No luck so we had a somewhat thrown together meal.  I had a salad with a burger on top. We also had a pan full of frozen French fries. Thank goodness for a stocked freezer and grocery store deals.  I realized this weekend we had two bags of frozen French fries and some tater tots. Mr. J did a happy dance with this discovery.

Dessert was brownies. A hodge podge brownie that ended up being gluten-free and super good.  


Peanut butter. Chocolate.  Bananas. Oh my.



Paleo Brownies

Prep Time: 10 minutes
Cook Time: 15-20 minutes

Ingredients (serves 12)
  • 1 cup peanut butter
  • 2 bananas, mushed
  • 1/2 cup coconut milk
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup cocoa powder
  • 1/4 cup sugar
  • 1/3 cup dark chocolate, chopped
  • 1/3 cup chopped walnuts
Instructions
Preheat the oven to 350°F. Grease an 8 x 8 baking dish.

In a bowl whisk together the peanut butter, coconut milk, eggs, vanilla extract and salt.

Add the cocoa powder and sugar and combine. Fold in mashed bananas. Finally, stir in chocolate and walnuts pieces.

Pour into the prepared baking dish.

Bake until done, about 15-20 minutes. The top should look dry, but the inside should still look wet. Let cool. Brownies will continue to cook and firm up as they cool.
