S'mores Bars


I haven't had a S'mores all summer long. A tragedy. And now we are in August and I have major catch up to do.  I am not the camping type so spending a week in the woods for a camp fire is out of the question.


Instead I resort to the grill, the stove top, and the microwave for a classic S'mores. I am also collecting major recipes from fabulous blogs for S'mores desserts. Ice cream, cookies, pies. Man, there are some good ones out there. 


I had all of the ingredients for these bars and with a house guest this weekend I thought it was the perfect time to try it out.  Let me tell you these things are DELISH!  They taste just like a S'mores. And if you like the mess of a S'mores they even leave your fingers sticky and mouth with marshmallow strings.  I already had requests for a remake.

If you don't have plans to go camping anytime soon. These bars will certainly meet your S'mores craving.


S'mores Bars

Ingredients (serves 9)
  • 1/2 tsp water
  • 1/2 tsp baking soda
  • 1/2 cup butter, unsalted
  • 1/3 cup brown sugar, packed
  • 1/3 cup granulated sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1/2 tsp salt
  • 1/2 cup flour
  • 1/2 cup graham cracker crumbs, (about 5 sheets broken up)
  • 1 cup chocolate chunks or chips, divided
  • 1 cup mini marshmallows
Instructions
Preheat oven to 350 degrees. Grease a 8 inch square pan.

Mix baking soda and water. Set aside.

Cream together butter, granulated sugar and brown sugar.

Add vanilla, egg and baking soda/water mix.

Gradually beat in flour, graham cracker crumbs and salt.

Mix in 1/2 cup of chocolates by hand.

Spread in prepared pan and bake at 350°F for 15 minutes.

Remove from oven and turn the broiler on.

Sprinkle mini marshmallows over the bars. Return pan to oven for about 1 minute, to toast marshmallows. Watch carefully as they go from good to burnt quickly.

Turn oven off and remove the bars. Sprinkle with remaining 1/2 cup of chocolates and return to the still warm oven for a couple of minutes to soften.

  9. We loved these! I made the mistake, though, of trying to stir a few marshmallows into the batter which made it extra sticky / gooey but they were SO YUMMY! They were gone by the next day. :)
