perfect breakfast sandwich and WIAW

I am going to just come right out and say this week has been miserable. By the end of the day Monday it felt like Friday.  That wasn't giving Tuesday much of a head start. Sadly Tuesday was not much better. 


Thank goodness I started with an uh-mazing breakfast sandwich. I like my smoothies and cereal most mornings but we had bread, pesto and cream cheese ready and I couldn't help myself.

One piece of of good bread layered with cream cheese.
Topped with a bit more shredded cheddar cheese.
One fried egg.
Tomato slice.
One more piece of bread smothered with pesto.

Yum, yum and yum.  Best breakfast EVER.


After a hectic morning lunch was at my desk. A few strawberries with a turkey sandwich. I jumped ahead to November with this meal. My sandwich had all sorts of cranberry relish along with fontina cheese and spinach.


Somehow a Starbuck's latte appeared in the afternoon from my husband. It was a great surprise and much needed. Of course when it was gone I immediately wished I had another. Lattes are like a drug for me.


The day seemed liked it would never end. After a late meeting in the office I finally got home ready for this gigantic bowl of pasta with clam sauce.

Ben and Jerry's Superfudge Brownies


Sometimes Mr. J and I fight. He wants apple pie. I want cookies.  Marriage is tough.

Our compromise was brownies.  Really rich brownies.


Mr. J however ended up eating the last three brownies without me knowing. Never a good thing when you go to eat your evening dessert only to find out that no more exists.

Marriage is tough.

My advice, if you make these brownies grab them when you can. You never know when they will be gone. 

I have a favorite recipe that uses cocoa powder but I truly feel a good brownie comes from melting a hunk of chocolate.  This recipe does just that.


Ben and Jerry's Superfudge Brownies

Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients (serves 12)
  • 4 oz. unsweetened chocolate
  • 1/2 cup (1 stick) butter
  • 4 large eggs, at room temp.
  • 1/2 tsp salt
  • 2 cups sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
Instructions
Preheat the oven to 350F. Butter and lightly flour a 13x9 baking pan.

Melt the chocolate and butter in the top of a double boiler over simmering water. Let cool in the pan to room temp.

Beat the eggs and salt in a mixing bowl until very fluffy. Gradually beat in the sugar and vanilla. Fold in the cooled chocolate mixture. Add the flour and fold just until blended. (It is important to fold in the chocolate and flour gently to keep the batter as fluffy as possible.)

Pour the batter into the prepared pan and smooth the top. Bake 25 to 30 minutes. Let cool in the pan completely before cutting.

black cherry chocolate chip frozen yogurt



June is here and with it came very hot weather. Weather that meant the only way to get cool is to eat ice cream.  Challenge accepted. 




Today is the monthly posting for the Chocolate Party. Cherries were the chosen ingredient to pair with chocolate and all I could thing about was Cherry Garcia ice cream. I have never had it but thought if it works for Ben and Jerry's surely a cherry and chocolate ice cream would be a winner.



I ended up with lighter frozen treat swapping in Greek yogurt as the base.  After all I was planning on having this to cool off many days in a row, many times a day. 

I used an ice cream maker but you can simply mix the ingredients and freeze if you don't have one.  Regardless this should be eaten within three or four days of freezing otherwise ice crystals form.

Black Cherry Chocolate Chip Frozen Yogurt

Prep Time: 5 minutes, chill time 1 hour p
Cook Time: Freeze overnight
Keywords: chocolate ice-cream
Ingredients (serves 4)
  • 12 oz black cherry Greek yogurt
  • 1/4 cup agave nectar
  • 1/2 mini chocolate chips
Instructions
Mix yogurt and agave nectar together and chill for a few hours in the refrigerator.

Pour mixture into frozen ice cream maker bowl and churn as instructed by ice cream makers directions. (I used the KitchenAid attachment and ran it for 15 minutes.

Two minutes before it is done, stop machine and add in the mini chocolate chips.

Remove frozen yogurt from machine and put into a freeze container. Freeze over night or until desired consistency.

Serve with hot fudge or chocolate sauce.
