Lately and #WIAW

I am living in a bit of chaos right now. The kitchen renovations are at this height of destructiveness. Mainly due to the fact that we are redoing our floors. Given that the portion of the house under construction is where we spend about 90% of our time when not sleeping it has been a struggle. We were doing pretty good with the whole no water/sink situation. Not having a living space is different. Our little family of three has been hanging out in the bedroom and going to bed early the last couple of weeks.

On top of that daycare decided to use this week as one of its annual shut down for professional development days. I have been working from home with the munchkin. She is a super baby and hasn't been any trouble. Long morning naps are when I am most productive.

In the afternoon she joins me with some toy time. Her moose is currently way more fascinating than my computer. The iPhone however is a different story.

The kitchen is making progress. We have done some of the flooring. The counter tops are going in tomorrow. And then it will be mainly finishing touches. I am thinking those last little to dos might take us forever. I owe you a more in-depth kitchen update. I have been snapping photos along the way so I have a bunch to share.

Once everything is done we are all going to be smiles.

Our Kitchen is a DISASTER and #WIAW

Demolition continued on our kitchen last weekend. More cabinets are gone. The ginormous closet is emptied and shelves are gone. Flooring is missing. My anxiety is through the roof. It is all for a good cause though. I am patiently waiting for it to all be done. Sadly I think this little (Ha!) project is going to last well into the Fall.

Starting today our meals are going to be simple. Minimal dishes. Easy cooking. I am going to use this post and look back on longingly when I miss a good home cooked meal over the next couple of weeks.

Breakfast was my normal trio of beverages. Water. Coffee. Green smoothie. Our new set up is the coffee pot right by the couch. Pretty convenient for refills.

Lunch was a turkey sandwich with cheddar cheese, hummus, tomatoes, and lettuce. Simple but satisfying on a hot day.

Dinner was amazing! BBQ chicken on the grill. Mac and cheese (Horizon boxed is the best) and a chopped salad with BBQ ranch dressing.

My snack of choice has been plain yogurt, blueberries and granola.  Every afternoon around 3 pm I am starving. This holds me over till dinner.

Of course a cookie is what holds me over after dinner. I switched things up and made M&M. And I enjoyed every last bit of them.

#WIAW Enough Said

I think I am getting into my groove about working again. Mornings and evenings don't seem so frantic to me anymore. I think it is all about priorities. You do what you need to do and then don't worry about anything else.

Yesterday I had a meeting in New Haven. It is about 25 minutes from our house. It was a great way to get out on the road again without really being on the road.

The meeting ended right at lunch time and I snagged this yummy sandwich. Not the healthiest choice but certainly delicious. I am sucker for chicken cutlet.

Dinner was chicken too. I actually had a salad too but ate it before I realized I didn't take a picture. We grilled this chicken up on Sunday and I ate two thighs cold for dinner. Quick and simple.

We also having been snacking on fruit. Peaches are still ify but this batch seemed pretty good. I am still getting apple now and then. I am enjoying the summer fruits but I miss the good apples too. I am trying not to wish for Fall too soon.

Breakfast for Lunch and Dinner #WIAW

Oh man I feel like summer is finally here. It is June. Sunny. Hot. I may be back to work but I feel like we are in a routine of sorts.  Maternity leave was like a dream world where we just played all day long.  Now things are real. Not in a bad way either.

Back at work hasn't changed breakfast up. Still a green smoothie but today I added a blueberry muffin to jazz things up.  It was an early up day making my coffee nearly empty the time 6:30 rolled around.

Lunch was breakfast. We went out for a feast of a breakfast Sunday morning and here are the leftovers. I go on and off breakfast leftovers but these were pretty good. The pancake was like a built in dessert. Plus I am not going to complain when a meal is pre-made.

Dinner has been pretty low key too.  This was a taco salad made with leftover taco filling. Not quite a Chipotle bowl but still pretty good. #avocadolove

We have a drooler on our hands so this is probably the first of many outfits for the day.  Furture Bryn Mawr girl!

The last day and #WIAW

Ah, I cannot believe it is Wednesday and even worse is that tomorrow I have to go back to work. Bye bye maternity leave. I was lucky to get 12 weeks off but let me be clear it is NOT nearly enough time. I have tried to savor every moment especially the last few days. This meant more snuggle time and breaking all of my rules about nap time in the crib.

My morning started with my trifecta of beverages.  Coffee, water and a green smoothie is my way of kicking off the day.

Lunch was a quick sandwich I threw together while the little one took her typically 30 minute nap.  It was made special with homemade bread and avocado. I think the only way to get me to enjoy a cold sandwich is with avocados. We got a bag of cherries at the store last weekend and Mr. J quickly ate the whole bag. I went back and got more since they were on sale. Can you believe how much cherries are?  The two bags I bought were each $20 bags if not on sale. I ended up getting them for about $2.77/lb but that was still $6 or so.

We made some killer dinners the last few nights including this skillet chicken dinner. It totally hit the spot with this cold, and rainy weather.

And here is the little one during tummy time. She is in love with the zebra.

Pizza Party, Tummy Time and #WIAW

For some reason this week seems to have dragged on and on and on. I couldn't believe it was only Tuesday yesterday. I guess someone heard my wish to make time slow down.

Despite the gray and rainy day I opted for a green smoothie. Using the blender when the baby is still sleeping always makes me hold my breath.  So far it doesn't seem to wake her up but I would really hate myself if it did just so I could have a smoothie.

Lunch was avocado toast with our homemade bread. I started jazzing up the slices even more.  Avocado and hummus is super good and a new favorite is with feta and tomatoes. It looks prettier than the hummus slice too.

Dinner was an unexpected pizza party when some friends stopped by after work.  Miss Olivia was such a sleepy face all afternoon. Against my better judgement she slept on me and Mr. J on and off for almost 3 hours. During more active hours we played with our animal friends.

What is your favorite kind of avocado toast?

What Happened To Spring and #WIAW

Has it been hot where you live?  We went from 15-20 degrees below normal a few weeks ago to 15-20 degrees above normal this week. It was full blown summer temperatures. And I was one hot mama. I think the baby took after me in the whole I don't like the heat temperament. We have had a naked baby on our hands for the last few days.

Breakfast was homemade cinnamon swirl bread with chocolate peanut butter and banana. Love this breakfast.

This sandwich was an attempt to recreate a local panini that I love. It has mozzarella, prosciutto, tomato, and arugula. I should have had pesto but even without this was one killer sandwich. I bought the ingredients and Mr. J made the sandwich. Happy Mother's Day to me! It was perfect. No more $8 sandwich for me.

Snacks have been granola, yogurt, and BERRIES!  I am counting down the days till the fresh berries are back but for now the stores are stocked and on sale.

Since it has been so hot dinner has been out. No cooking here. The first night we got Five Guys. There is one that just opened not too far away and we have gone way TOO often in the last couple of months. This one even has shakes. I don't know if this is a new thing for Five Guys or not but man is it dangerous. I got banana and Oreo pieces. Another night we got pizza.

And finally my little nugget is two months old?!?!  Not sure how that happened. She is so big and bright eyed. We officially transferred over to the 6 month outfits this week.  Ahh!

Is it almost Friday and #WIAW

There are some days when I am cannot believe how it is Wednesday. Other weeks it is more like how is it only Wednesday. Yesterday afternoon seemed to last forever. I would really like the weekend.

We got an amazing loaf of Italian bread for dinner the other night. The two of us barely consumed a 1/3 of the loaf at night so it was up for grabs with breakfast. I toasted it with a fried egg and cheese.

Somehow lunch got away from me. I think it has something to do with a crying baby.  Thus no picture. And here I am thinking what did I actually eat. I couldn't remember for the longest time...but now I know. It was pretty darn good. A chicken salad sandwich. The salad was made of just chopped up chicken breast and avocado. It is my new favorite thing.

Dinner was actually leftover enchiladas. We celebrated early and made enchiladas on Monday.  We had the leftovers for Cinco de Mayo.  It has been so nice we go on walks before dinner. It is great to go on the walk but a pain to start dinner so late. Leftovers makes dinner time much more doable.

Did you celebrate Cinco de Mayo?
