Browned Butter Dark Chocolate Chip Blondies #Choctoberfest

It is amazing how sometimes the week flies by but the days seem so long. This week was quite a week. I always enjoy a good Friday treat though.  Makes the weekend just a bit more special. 




These browned butter dark chocolate chip blondies hit the spot and are so easy to put together.  The kids are a bit confused. Cookies but Brownie squares.  In the end they don't really care as long as it is sweet and delicious. 


I hope you enjoy them as much as the kids did.





Browned Butter Dark Chocolate Chip Blondies

Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients (serves 9)
  • 1/2 cup unsalted butter (1 stick), browned
  • 1 large egg
  • 1 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 1 scant cup all-purpose flour
  • 1/2 teaspoon salt, or to taste
  • 1 cup dark chocolate chocolate chips
Instructions
Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.

Make the browned butter. In a large skillet add the butter and heat over medium heat to melt, stirring nearly continuously or swirling the pan. Butter will melt, foam, turn clear, golden, and then turn brown, with a nutty smell. As soon at the butter begins to turn brown and there are a few brown specks, take the pan off the heat, and pour butter into a large bowl. Set aside to cool for 10 minutes before adding the next ingredients.

Add the egg, brown sugar, vanilla, and whisk until smooth.

Add the flour, salt, and stir until just combined. Don't over mix.

Add the chocolate chips and stir to combine.

Turn batter out into prepared pan, smoothing the top lightly with a spatula, and bake for about 20 minutes, or until top is set in center and done; don't over bake.

Place pan on a wire rack to cool for at least 1 hour before slicing and serving.

Double Chocolate Muffins #Choctoberfest



It has been a while since I posted a recipe but this one was necessary.  It was suppose to be cold and rainy the next few days.  Anticipating some wild little ones, I whipped up these double chocolate muffins for treats and breakfast.

Double Chocolate Muffins

Prep Time: 20 minutes
Cook Time: 12 minutes

Ingredients (12 muffins)
  • 1/2 cup canola oil vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs lightly beaten
  • 1 tsp vanilla extract
  • 2/3 cup sour cream
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semisweet chocolate chips
Instructions
Preheat oven to 375F and line 12 muffin cups with cupcake liners.

In large bowl, whisk together oil, sugar, and milk. Stir in eggs and vanilla until well-combined.
Gently fold in sour cream until just-combined.

In separate, medium-sized bowl, whisk together flour, cocoa powder, baking soda, and salt.

Fold flour mixture gently into wet mixture, folding until just barely combined. Stir in chocolate chips.
Scoop chocolate muffin batter into prepared muffin tin, filling 2/3-3/4 of the way full.

Bake on 375F for 12 minutes (toothpick inserted in center should come out with a few crumbs.
