Word Confusion

I don't know about you but I always get confused about the differences between cobblers, buckles, crisps, etc.  There so so many.  This recipe is from an old Iowa church cookbook.  In my option those farmer's wives really know how to whip up some yummy treats. 


The loosest definition of the fruit cobbler is that it contains a bottom layer of fruit, topped with some type of pastry. More often, the fruit cobbler is topped with biscuit dough. The dough does not necessarily completely cover the fruit, but may be made into dumpling shapes, which are spaced evenly over the fruit. Others feel the fruit should be completely covered with biscuit dough.  The pictures I have seen of these lately just don't look all that appetizing to me.


A crisp typically has sliced fruit, frequently apple or cherries, is topped with a loose mixture of butter, flour, brown sugar and occasionally oats. The top turns a golden brown and presents a lovely contrast. Because this “crust” is fairly sweet, crisps work best with fruit that is slightly tart.

The buckle is yet another possible cobbler version and can be made in one of two ways. It either is a cake batter with fruit mixed in and then baked, or it can be a cake batter that is layered on the bottom of a pan and is topped with fruit before baking. It’s a cobbler in reverse, essentially, with cake instead of pastry.

There you have it. Got it.  Give me a few days, I will have to look up the definitions again.  I am pretty sure this one is much more of a buckle than a cobbler.  Regardless of the true name, the end result is delicious!

Quick Cobbler

Adapted from a very old Iowa church cookbook
Passed down from my mom

1 c. flour
3/4 c. sugar
2 tsp baking powder
1 c. milk
1 stick butter
1 large can peaches with juice

Directions:
1. Preheat oven to 350 degrees.  Make a batter with flour, sugar, baking powder, and milk.


2. In a iron skillet, melt the butter.


3. Pour the batter in the skillet on top of butter and add the peaches on top. DO NOT STIR.


Bake 40 minutes.

Weekend Edition: Father's Day

Have you missed me?  I feel like I have been out of the the blog loop lately.  Here is an update of last week:
  • I flew to Kansas last week for work.  It was hot and humid.  The people were a hoot and we got a ton accomplished.  Then my computer broke. I saw pretty rainbow colors on the screen and then it went to the deathly blue color.  After that I was lucky if I was able to turn it on for more than 30 minutes at a time.
  • My flight home was delayed two hours and I didn't climb into my own bed till 2am on Friday morning.  I was a cranky girl Friday. Sorry to all of my co-workers who I probably gave the scary face.


But that was last week.  It is the weekend and FATHER'S DAY!  Sadly, I cannot be celebrating in person but I am wishing my Daddy a very Happy Father's Day.  My brother and I are chipping in for a TV for my parent's bedroom.  Their old one stopped working a few months ago.  They have been doing some pretty major updates on the rest of the house this summer so the TV was put on hold.  Now they are getting a flat screen.   Woah!  My dad is really moving up in the world.  I hope he enjoys his TV.  Love you Dad! 


The weather man did an awful job predicting the weather this weekend.  There was storms expected last night and a rainy Sunday.  Instead we had beautiful sunshine. To relish in the glorious sunshine, I had this delicious summertime breakfast.  Love the berries!


Saturday day a few Connecticut bloggers met up at Gouveia Vineyards.  The scenery was very much like Napa.  I miss California. 


I was actually a little in shock that such a pretty place existed a mere 15 minutes from my apartment. 


The wine was not my favorite but I can definitely see coming back here for a picnic. We learned the hard way because near the end of the visit we were surrounded but other very intelligent people who brought loads and loads of delicious smelling food.  In the end we were driven away from our hunger.


We did the wine tasting at the bar - 5 tasting for $6/person and you get to keep the glass.


4 of the options were pre-selected and then you got to pick the last tasting.  I chose the Cabernet Franc.  It ended up being my favorite.  I swear once you go red you can never go back to white.  I know a lot of people enjoy white wines.  I just cannot mouth them.  Even in the summer I would much prefer a deep, rich, dry red. 


As for the girls, well we had a great time.  This turned into a major girl-get together with more talk about craziness than blogs. 


Did you know that animal sounds in Russia are completely different than the US ones?  If you want some good entertainment, find yourself a Russian and ask them to make the sound of a pig or a horse.   You will be in for a good laugh.

Friday's 5 Kitchen Favorites



1. Blender - This for me is a daily use appliance.  How else would I get my morning smoothie? I love my blender and don't really know what I would do without it.  From dips to drinks, this machine gets a lot of use in our household.



2. Salt Pig - Isn't it cute?  This is more of a favorite for Mr. J as he insists on adding salt to everything and lots of it. 

3. Rubber spatulas - Most people think that minimalism is a virture.   I don't think this holds true for rubber spatulas.  I use one once a day to scrape out my smoothis for breakfast.  These are also my go to tool for dinner.  I think the more colors the better.  Honestly the my make time in the kitchen that much happier.


4. Knives - the Global knife set was the great debate of our wedding registry.  They are the best knives but I thihnk they are so ugly.  The compromise was the set tray instead of the counter hold which I thought looked like a big space ship.



5. Pepper Cracker- I couldn't live with out this.  Fresh cracked pepper is the best!
