Dark Chocolate Pistachio Cookies #KickOffToSummerWeek2014 #GourmetGarden

I cannot think of a better summer treat than a cookie. Most come together so easily and of course they are a grab and go kind of treat. My all time favorite cookies are M&M and chocolate chip. Classics!  You can never go wrong with those two kinds but sometimes you want something a bit more special.




Today I have for you that special kind of cookie. I took the classic chocolate chip cookie and upped the stakes with switching out the semi sweet chocolate chips with dark chocolate and adding pistachios.  What is it about pistachios that make everything seem extra amazing? These cookies are sure to bring a smile to any kids's face both big and small.  I know they will be making some more appearances this summer at our house.


Dark Chocolate Pistachio Cookies

Prep Time: 15 minutes
Cook Time: 10 minutes
Ingredients (36 cookies)
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 2 cups (12-oz. pkg.) Dark Chocolate Chips
  • 1 cup pistachios, chopped
Instructions
Preheat oven to 350° F. Line a cookie sheet with a non-slip pad or parchment paper.

In a small bowl, sift flour, baking soda and salt. 

In a stand mixer cream butter, granulated sugar, brown sugar and vanilla extract in. Add eggs, one at a time, beating well after each addition.

Gradually mix in flour mixture.

Remove bowl from stand mixer and fold in dark chocolate chips and pistachios until combined. Drop by rounded tablespoon onto cookie sheets.

Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool.
