Green Smoothie and WIAW

Yesterday was my company's winter company meeting. In the past this has a been a multi day event where the whole company flies in.  This was always quite the to do if you can imagine.  Weather would get in the way and January was actually a pretty bad month with other obligations to complete to take essentially a week off.  This year we had a 1/2 day virtual event.  I had to drive 10 minutes down the road to the next town over and sit in a hotel by the shore.  Tough huh?

The meeting went fine but that meant lunch and dinner were provided and I didn't know what I would be eating.  Going into a day with no idea what to expect in terms of food always makes me nervous.  I don't like it.



I started the day off with a smoothie just to make sure that my veggies had a solid foundation for the day.  I have been having these pretty much once a day since I have been home from the holidays.  I buy pre-washed bags of baby spinach.  I go through 1 bag for every two smoothies.

Green Monster Smoothie

Ingredients (serves 2)
  • 1 frozen sliced banana
  • 1 Tbsp peanut butter
  • 1 cup of any unsweetened milk (my favorite is coconut or almond milk)
  • 1 tsp chia seeds
  • about 2 cups baby spinach (or more, or less)
Instructions
Combine all ingredients in a blender and blend until smooth, about 2 minutes.

Strawberry Banana Smoothie  

I completely forgot to snap my lunch plate. We had a buffet of make your own sandwiches. I had a mix of Caesar and mixed green salad.  Caesar always has too much dressing for my taste so adding the extra dry greens help even things out.  

For my sandwich, I had a brioche bun with mustard, provolone cheese, 2 slices of roast beef, and then topped with tomato slices.  I had a few roasted veggies too.  They were for the sandwich but kept sliding out.  

Dessert was tea and a very rich chocolate brownie.  It was delicious.  They had chocolate chip cookies too. It was so difficult to decide what to get. Around 4pm I ended up snacking on a cookie too.
 

Dinner was a choice between chicken and salmon. I opted for the chicken as the safer option.  The steammed veggies seemed to be the better side choice as well. The picture came out much better than I expected.  The taste was OK but nothing special.  

Dessert was so pretty.  Fresh fruit in the winter is always special. The tart shell wasn't that great so I scooped out the filling and ate the fruit.  



I ended up leaving around 8pm.  It was a long day and very short night before I ended up in bed.  I have been trying to read each night and only could keep my eyes open for 20 pages.

  1. Yeah, when the food is unknown, I often fill my purse up with healthy snacks! Looks like it wasn't so bad :) I have never made a green smoothie...but the banana and coconut milk must add a nice sweetness.

  6. I used to drink a green smoothie every morning for 3 months when I was really being nutritious... I gotta get back to it. I think it gave me the energy to exercise too. :) Love your day of food. :)
