A Bit of Healthiness and WIAW

Hello friends. I feel like it has been forever since we chatted.  Yes, I have been posting recipes regularly over the holidays but so much more has been happening.  

Rewind about two weeks to December 14th.  Mr. J and I were off to southern California.  We got to explore a new area of the country and check out Disneyland.  Unfortunately during this trip I pulled some kind of muscle in my leg quite badly and hobbled around all week.  

As soon as we got back we packed the car and made the trek to Maine. We had a wonderful time with family and friends. We joined the tech world with iPhones ( I am still trying to figure everything out).  And then cut our trip short to beat a snow storm.  


No sooner did we get back to Connecticut, then for me to pick up a nasty cold.  I was tired, sniffling and coughing for the last 5 days.  I finally gave up trying to get anything done I had planned for my days off and just watched TV.  Hours and hours of bad TV.  

Now today I still sound pretty awful.  My voice is never the husky, sexy voice.  (Is it possible to be husky and sexy at the same time?)  It just sounds sickly.  There doesn't seem to be anything to do about it.   Anyway, I am feeling better but am bummed that it is time to go back to work. 

Tuesday Mr. J and lounged around the apartment and ate well.  We started the day off with homemade cinnamon buns.  I had never made completely for scratch cinnamon rolls.  Not the best way to start off a healthy new year but they sure were delicious. I will post the recipe next week.




Lunch was some greens for me.  It offset the cinnamon roll.  My MIL made this fabulous salad dressing while we were visiting for Christmas.  She shared the recipe and I know we will be making it often.




Maple Vinaigrette

Prep Time: 5 minutes
Keywords: salad maple syrup


Ingredients (Enough for 2 large salads)
  • 1 minced shallot
  • 1 tsp Dijon mustard
  • 2 Tbsp red wine vinegar
  • 1/4 cup olive oil
  • 2 tsp maple syrup
  • salt
  • pepper
Instructions
Add all ingredients into a seal-able jar or container. Shake well until combined.

Season with salt and pepper to taste.

Dinner was Chinese leftovers.  Our tradition for NYE is a bottle of champagne and Chinese take out.  There were noodles, orange beef, egg rolls, crab ragoon, and egg drop soup.  It was quite a feast.  A feast we had again on Tuesday.  I don't know what person doesn't love take out leftovers.

  3. I haven't heard of Chinese food on NYE but I've heard of it on Christmas Day! Feel better soon - I went to get my cousin medicine and there was hardly any left in the aisle!
