It is Sunday though so staying in bed should not have been a problem. There was a problem though. A few weeks ago I signed up for a local race. I was just doing the 5K portion but I wasn't feeling like crawling out of bed to the 8am start time.
I will write more about the race tomorrow but basically before we started we were drenched. I finished but the 3 miles must have taken all of strength. After a bit of water and a hot shower I was back in bed. Two hours later Mr. J brought me some chicken soup. It wasn't homemade, but it hit the spot.
With a bit more sleep and reading I am finally feeling back to normal. I also feel like I wasted the day. I hate that feeling. I started thinking about all of the things I do to be super productive. I thought I would share a few.
1. Utilize the freezer. I love our freezer and it is always packed full. When I make cookie dough, I only bake off 12 cookies at a time. The rest go into the freezer for another day. When the sweet tooth attacks, just pop some on a baking sheet and 15 minutes later you have some very lovely homemade cookies.
2. Home brewed Iced Tea. I have perfected this method just recently and Mr. J and I have been enjoying our tea ever since. I just fill a tea kettle and set on stove top till it screams at you that its ready. Add 4 tea bags and let sit for about 4 hours. We have been using Black Tea with a hint of orange. It is fantastic!
3. Coconut Frappacino. If all else fails, I just have some coffee. Lately I steal some of the morning coffee away in the fridge. When I need a frosty pick-me-up, I had 1C cooled coffee to 1C coconut milk. Add a few ice cubes and blend away. A bit of chocolate sauce doesn't hurt either!
I have a fairly small apartment and was trying to figure out how I could fit even a small chest freezer. I know for sure i could save money if I had one.

Aw!! I was wondering if you came to the race...Kari and I were looking for you! The rain was crazy ridiculous...nice job on getting out there and getting it done :)

First off....congratulations on finishing the race. Doing it while you're not feeling is quite a feat! I hope you feel better soon and I LOVE the cookie dough idea!
ReplyDeleteI hope you feel better! I think I am going to start doing that with my cookie dough as well. My friend and I were talking about how smart it is to do that this weekend.
