Elvis pancakes {bacon+banana+peanut butter+chocolate chips}

These are some serious pancakes. Talk about a full meal.

Meat. Check.

Fruit. Check.

Chocolate. Check.

Peanut butter. Check.

Peanut butter and chocolate definitely need their own food group.

Some mornings I know making it through the day is going to requite some extra boosts of energy and feel good endorphins.  Although exercises is an option I would much rather go with a breakfast like these pancakes.

They don't take much more time than the average Joe cereal option but ends up being much more delicious and satisfying.

Ingredients (serves 4)
  • 3/4 cup whole wheat flour
  • 3/4 cup All-Purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 Tbsp sugar
  • 2 eggs
  • 2 cup buttermilk
  • 1/2 cup mini chocolate chips
  • 1 banana, chopped
  • 2 slices bacon, cooked and chopped

In a large bowl, whisk together flours, baking powder, baking soda, and sugar.

In a separate bowl mix together eggs and milk. Combine wet and dry ingredients in flour bowl. Stir until just combined. Fold in chocolate chips, half of bacon, and most of banana pieces. (The remaining amount will be used as a topping.)

Spray griddle with non-stick spray. Pour 1/4 cup onto hot griddle. Cook until small bubbles are forming on the top (about 4 minutes). Flip and cook for an addition 3-4 minutes.

Top with remaining bacon and banana pieces. Serve with peanut butter.
