Leftover steak, Top 9 and WIAW

This morning I woke up to a nice little email from Foodbuzz announcing I made the Top 9.  So exciting! This is a first for me and I got goosebumps. Thanks so much for voting!

Yesterday was all things hectic as I unexpectedly had to go to Boston for the day.  It was a nice change for a driving trip since Boston is really only 2 hours away.  However, traffic in the morning makes it closer to 3 hours.  It was a very early morning.  

I then came home to a sick Mr. J.  No matter how much I try, he doesn't get on the whole bandwagon of lots of fruits and veggies all the time till he gets sick.  Now he is sucking down OJ and oranges left and right.  Too bad it isn't instant remedy.



We had an amazing dinner that was made from some leftover prime rib we had from a weekend restaurant outing.  It was so good I am going to share the simple recipe.

Leftover Steak Burritos

Prep Time: 15 minutes
Cook Time: 5 minutes



Ingredients (serves 4)
  • Thinly sliced cooked steak (about 8 oz)
  • 1 onions, finely chopped
  • 2 Tbsp butter
  • 1 tomato, chopped
  • 1 green pepper, chopped
  • 1 Tbsp chopped pickled jalapeno
  • 2 cloves garlic, minced
  • 1 Tsp Worcestershire sauce
  • 1/4 tsp celery salt
Instructions
Saute onion, green peppers, tomatoes, and garlic in melted butter. When softened, add Worcestershire sauce and celery salt to season. Toss in leftover sliced steak pieces. Cook till heated.

Breakfast was held off till 9am till I got to Boston.  I ended up at Starbucks and had a quick bite of oatmeal and latte.  



It filled me up nicely because lunch wasn't till 1:30pm.  Typically I get hungry around 11:30 but my late breakfast made it not too bad. I was in the Mission Hill area of Boston and we had lunch at The Squealing Pig.  It was a cute local joint with good food. I was on a business lunch with people outside of my company so no photos here. I had a salmon club....three layers with lettuce, tomato, thick bacon and a great fillet of salmon.   A small fry serving and water to wash it down.


Since I lacked veggies all day I took the leftover meat mixture and threw it on top of a salad.  Whenever I feel like I need more greens I simple put whatever I am going to eat on top of a bed of lettuce. Mr. J sat on the couch but I had to catch up on a day's worth of emails.  Never fun.  Wine made it better.


As an added bonus it was Free Cone Day at Ben and Jerry's yesterday.  I managed to convince Mr. J that his throat would feel so much better with some cold ice cream.  His side job is a doctor with credentials from the internet.  He is convinced dairy is bad for a cold and wouldn't have ice cream.


The line was out the door but went super fast with the 10 worker bees behind the counter.   I didn't mean to take this boy's side view but he moved just as I took it. I am super good at taking non conspicuous pictures though and he had no idea.  


I got a frozen yogurt blueberry vanilla graham flavor.  It was kind of like blueberry pie with graham cracker crust. The perfect ending to a long day. Mr. J ended up with berry sorbet.  Fitting for his no dairy recommendation.  Thanks Ben and Jerry's!

    Great idea for using leftover steak! (My only problem is that if I'm eating steak, there's not a big chance of having any "left over"... hehe)

    1. Haha, come to think of it they didn't even ask if we wanted a cone. I don't like cones myself and would have gotten a cup any way.

  6. Congrats on top 9 for that luscious fruit pizza! You are very much like me in the fact that when it comes to leftovers, I usually make it into some Tex mex dish. I like the addition of the worcestershire in there-yum! You did eat well, especially with the B&J ending.

  13. Congratulations on your first Top 9!! That is very exciting! I remember my first time, I literally jumped up and down with joy. It's an accomplishment and you should certainly pat yourself on the back for it. Congratulations again!
